Three independent cafés in South London required daily pastry delivery to supplement their in-house offerings. Each location needed consistent supply six days per week, with quantities adjusted based on day of the week and seasonal demand patterns.

Route Management
The delivery route covers 12 miles across South London, starting in Clapham at 6:30 AM, proceeding to Brixton at 6:45 AM, and finishing in Balham at 7:00 AM. This sequence ensures each café receives items before their 7:30 AM opening time.
Quantities vary by location and weekday. The Clapham café typically receives 35-45 items, Brixton takes 25-35 items, and Balham orders 20-40 items. Weekend quantities increase by approximately 30% to accommodate higher customer traffic.
Product Mix
Each café has established its preferred product mix based on customer preferences. Clapham focuses on croissants and pain au chocolat, Brixton requests more savoury options including cheese twists, whilst Balham emphasises seasonal fruit pastries. We adjust recipes quarterly based on feedback from café owners and their sales data, ensuring items align with local customer preferences whilst maintaining our quality standards.
